This is another Mennonite recipe.
Even though the title is Holiday, I think these can be made for any family gathering throughout the year.
4 lbs. Potatoes
1 C chopped Onion
1/4 C Butter
1 can of Cream of Celery Soup
1 1/2 C Shredded Cheddar Cheese
1 pint of Sour Cream
1/2 C Crushed Corn Flakes
3 TBS Butter, melted
Boil the potatoes with skins on, until tender
Remove the skins and shred the potatoes into a large bowl.
Saute the Onions in 1/4 C Butter.
Remove from heat and add Soup, Sour Cream, and Cheese.
Pour over the Potatoes and mix well.
Place in a buttered 9"X13" Casserole dish.
Sprinkle with the Corn Flakes and melted Butter.
Bake at 350 degrees for 1 hour.
