Eggplant Gratin

Here's what you'll need:
Preheat the oven to 350 degrees.
1 - 2qt. Oval Cast Iron Casserole Dish or a Challow casserole, brushed well with Vegetable Oil.

2 Large Eggplants, peeled and chopped
1 large Sweet Onion, roughly chopped
8 TBS Butter, divided
2 large Eggs, beaten
3 C shredded Sharp Cheddar Cheese
Salt and Pepper to taste
1/2 C Crushed Ritz Crackers

In a saucepan on medium heat:
Cook the Eggplant until tender.
Drain, mash and drain again to remove most of the liquid.

In a skillet:
4 TBS Butter, heat until melted.
Sauce until soft.

In a large Mixing Bowl:
Salt and Pepper

Pour into the casserole dish.
Sprinkle evenly with the Crackers.
Dot with the remaining Butter.
Bake for 45 minutes.
