I hesitated to post this because it seemed too simple, but it turned out to be delicious.
I didn't photograph the beginning of the recipe but I think it's self explanatory.
It's quite simple.
You'll need:
1 TBS Vegetable Oil
1 TBS Butter
2 Eggs, whisked.
1 Flour Tortilla
Your choice of favorite fillings.
Garnishes for the finished Omelette.
(Salsa, Sour Cream, Cilantro, diced Green Onions, Shredded Cheddar Cheese.)
In a Skillet on Medium Heat:
Oil and Butter until Butter melts and becomes frothy.
Add the Eggs.
Top the Eggs with the Tortilla and keep flipping it to coat well. (think French Toast)
When the Egg is cooked, top it with your favorite toppings and Salt and Pepper to taste.
Flip it over, in the pan, to create the Omelette. Slide it onto a Plate to serve.
You can also serve it open faced, like a Frittata, with your favorite toppings.
Garnish with your favorite toppings.
