PICKLED BLACK EYED PEAS:
2 Cans Black Eyed Peas, drained
1 C Olive Oil
1/2 C Red Wine Vinegar
1/4 C Minced Onion
1 Large Whole Garlic Clove
1/2 tsp Salt
2 Cans Black Eyed Peas, drained
1 C Olive Oil
1/2 C Red Wine Vinegar

1/2 tsp Salt
Mix all ingredients in a jar, refrigerate for at least 2 days. Shake often. Remove garlic after 1 day.
