Amish Peanut Butter, Honey and Oats Cookies

We just returned from our home in Colorado. Every Wednesday, there's a Market in town. Farmer's sell local Produce, there are Craft Artists, Antiques and several Amish Families selling Baked Goods.
We bought some delicious cookies from one of the Amish families. There was something simple and delicious about the cookie. They were soft and chewy. They kept at room temperature for over a week. They are a perfect Hippy in the Kitchen Cookie!

Amish Peanut Butter, Honey and Oats Cookies

Here's what you'll need:
Preheat the oven to 350 degrees.
A Sheet Pan lined with Parchment Paper.

1 C Creamy Peanut Butter
2/3 C Honey
1 Egg, beaten.
1 tsp Baking Soda
1/2 tsp Salt
1 C Oats

In a Mixing Bowl with a Hand Mixer:
Peanut Butter
Baking Soda
Cream together well.

Fold in Oats by hand.

Use a 1 1/2" Cookie Scoop and drop the cookies 2" apart onto the Sheet Pan.
Bake for 10 - 12 minutes.
Remove the Pan to a Rack to cool for 5 minutes.
Transfer the Cookies to the Rack to cool completely.
