Hash Brown Potato Casserole

Here's another traditional All American Recipe. This comes from my mother in law in Kansas. It's one of those pot luck , church, family gathering recipes. It's one of those dishes that everyone will ask for the recipe.
It's a family favorite.

1 - 2 lb. bag of Frozen Hash Brown Potatoes with Red Pepper and Onion, no need to thaw, but break them up to spread them in a casserole dish sprayed with a vegetable cooking spray.
1/2 C Melted Butter
1/4 tsp Black Pepper
1/2 C Diced Onion
1 C Heavy Cream
1 can of Cream of Mushroom Soup
1/2 pint of Sour Cream
2 C Shredded Cheddar Cheese, divided

Sour Cream
1 1/2 C Cheese
Mix well

Place the Frozen Hash Browns in a 9"X13" casserole or a 10" Cast Iron Skillet
Pour the Soup mixture over the potatoes
Top with 1/2 C Cheese
Bake at 350 degrees for 45 minutes
